Instructions

  1. Grind the saffron threads with a small pinch of sugar using a mortar and pestle until fine. Add 2-3 tablespoons of hot water and let it bloom for a few minutes until deep golden.

  2. In a small pot, combine the sugar with about 250ml (1 cup) of water. Heat on medium, stirring until the sugar dissolves completely. Remove from heat and let it cool.

  3. In a pitcher, combine the cooled sugar syrup, the remaining water, saffron water, rosewater, and lime juice. Stir well.

  4. Refrigerate until cold, or add ice to serve right away. The colour should be a bright golden yellow.

  5. Stir before serving as the saffron can settle. Pour over ice in glasses.
