Sharbate Zaferon (Saffron Cold Drink)

- 0.5 g Saffron threads
- 100 g Sugar
- 1 L Water
- 3 tbsp Rosewater
- 2 tbsp Fresh lime juice
- 1 cup Ice

Grind the saffron threads with a small pinch of sugar using a mortar and pestle until fine. Add 2-3 tablespoons of hot water and let it bloom for a few minutes until deep golden.

In a small pot, combine the sugar with about 250ml (1 cup) of water. Heat on medium, stirring until the sugar dissolves completely. Remove from heat and let it cool.

In a pitcher, combine the cooled sugar syrup, the remaining water, saffron water, rosewater, and lime juice. Stir well.

Refrigerate until cold, or add ice to serve right away. The colour should be a bright golden yellow.

Stir before serving as the saffron can settle. Pour over ice in glasses.
